Fall is an amazing time of year! As we notice fields dotted with brilliant orange pumpkins to the grapes recently harvested for winemaking to the extraordinary autumn colors scattered across the landscape, we are reminded of nature’s great gifts and all the hard work and care that go into cultivating such abundance.

In this season of harvest and thanksgiving, we remain grateful to you, tea lovers and friends, for your interest and loyalty. Thanks for helping us to spread the joy and appreciation of the wonderful natural resource we have with tea. We hope you enjoy learning about a couple of really special teas and offers below...

Introducing: Chota Tingrai Assam

We are pleased to introduce the newest tea in our collection, Chota Tingrai Assam. We are sourcing this bold black tea directly from the Mana Organics Tea Estate in Assam, India. The garden was founded by fourth generation tea grower, Avantika Jalan. Ms. Jalan championed the idea of an organic tea garden in Assam at a time when such cultivation methods were not considered practical in the region. Through trial and error, Avantika and her colleagues - many of them also female (a rarity in the world of Indian tea) - proved that it could be done. They've made great progress in their tea-making journey, having earned numerous international tasting awards and other accolades since their start.

Assam is one of the most productive tea growing regions in the world. The land is a fertile, rich, tropical jungle wherein plants grow vigorously. In spite of that, more than half of the tea grown in Assam is processed using the Cut, Twist, Curl (CTC) method popular for teabags or what we’d refer to as “commodity teas.” Mana Organics has taken a very different path as a small, organic, grower-direct Estate. From their robust composting process to the hand-harvesting of their tea leaves, Mana Organics is unique in a region filled with much larger tea growing operations. They manage everything on the Estate from growing to processing to packaging and shipping. In fact, the first time the tea is handled after it leaves the Estate is by Modern Steep; the second time is by you.

From a flavor profile, Chota Tingrai Assam is a strong black tea with moderate astringency and having the distinctive malty taste unique to the Assam region. It is one of the boldest pure-leaf black teas in our collection and holds up well should you enjoy the addition of milk and/or sweetener. This tea also makes a particularly strong and hearty iced tea. The hand-picked leaf is harvested as part of the second flush (May to June). The leaf style is TGFOP, having an abundance of high quality buds and fine leaves. We are excited to bring on this new tea as an alternate to our regular Assam (TGFOP1) and look forward to adding others from this Estate to our collection over time. And, from a price perspective, it is easy to see why this could be your next day-to-day cup of black tea!

Speaking again about Assam teas, we are especially excited to announce a new lower price on one of our most prized, hand-picked, hand-crafted and exceptional black teas, Kanoka Assam.

Grown on a plantation of just eight acres (miniscule in comparison to regional farms that can easily cover thousands of acres), this tea is sweet on the palate, with very little astringency and is nothing short of bold and delicious. The Nath family was the first to garden on the property and has never used pesticides or chemicals. We believe that the greatness of this tea is directly related to the family’s respect for the earth along with their hands-on, all-natural cultivation methods. The garden, Kanoka Tea Estate, is named in honor of the mother of the garden’s founders. Through direct trade with buyers such as us, the family is able to sustain well-above average, fair wages and conditions for their staff. Plain & Simple: What Happens When You Drink Tea Every Day?

Here at Modern Steep we read a lot of educational and research journals focused on the health properties of tea. Most of them are quite full of research methodology, equations and big scientific terms. However, an article published by one of our favorite entities, “Blue Zones,” caught our eye recently and we thought you might enjoy it as well. Written by Elisabeth Almekinder, a health journalist, diabetes specialist and registered nurse, the subtitle goes like this…. “Black, green, or herbal, we know tea is the longevity drink enjoyed among the longest-lived people in the world, but how does it work to extend longevity, relieve stress, protect against cancer, and decrease the risk of heart disease?” Follow the link below to find the brief article.

Recipe Idea: Green Tea Vinaigrette

Add a unique, fresh and delicious twist to your salad with a tea-infused vinaigrette.

1 Teaspoon loose-leaf green tea leaves (Sencha, Gunpowder, Green Snail or Dragonwell)

1 Teaspoon Fresh Thyme Leaves, Finely Chopped

½ Cup Rice Vinegar or White Wine Vinegar

1 Teaspoon Honey

1 Teaspoon Shallots, Finely Minced

¼ Teaspoon Sea Salt

¼ Teaspoon Freshly Ground Black Pepper

1 Cup Neutral Oil (e.g., Delicate Olive Oil, Flaxseed Oil, Avocado Oil, etc.)

Combine loose tea leaves and vinegar in small saucepan and bring to a gentle simmer over medium-low heat. Simmer for 1 minute, stirring occasionally. Remove from heat and set aside to cool down until just warm. Strain out and compost the spent leaves. Pour the tea-infused vinegar into a glass bowl. Add honey, oil, shallots, thyme, salt & pepper and whisk until well combined. Refrigerate for several hours in order to meld flavors. Use within 3-4 days.
